Pitta / pita bread
A flat, yeast bread, traditional in Greece and the Middle East. The bread has a natural pocket designed to accept food, this is produced by baking the bread in a very hot oven; this produces steam, which the puffs up and separates the bread into two layers. Known as 'khobiz/khubz adi' in Arabic.
