Lobster (homarus gammarus)

Lobsters have thick shells, which vary in colour from dark blue to greenish, and large powerful claws. When cooked, by boiling for between 15-20 minutes, they turn bright red.

Around 1,240 tons of lobster are landed around Britain annually, this compares to around 26,000 tons of 'Edible Crab'.
