Potatoes for baking & mashing

Both floury and waxy varieties produce good results when baked, but flavour is important, so buy Desiree, Maris Peer, King Edwards, Marfona, Vivaldi or Golden Wonder (available early in the year from Scottish sources). Supermarkets promote the adequate Cara, mainly because it suits their purposes, growing in a nice regular shape so it looks good at their point of sale; but this variety generally lacks flavour. For Mashing: King Edward, Maris Piper, Red Duke of York, Estima, Kestrel and Vivaldi are all excellent. The picture at the top left is a Desiree.
