Potatoes for Roasting & Chipping

The best roast potatoes are those in which the edges have "caught" in the oven to produce loose flakes rather than hard edges, so choose floury types such as Arran Chief, Kerrs Pink, King Edward and Maris Piper. Desirée also work well.
