Ptarmigan (lagopus mutus)

A small member of the grouse family, found in Northern Europe and in Scotland in particular. Unusually, it"s coat goes white in winter. Like a grouse, they may be shot between August 12th and December 10th. They are at their best braised. See 'Grouse'
