A mixture of four ground spices (cloves, cinnamon or ginger, nutmeg & allspice or pepper) traditional in French charcuterie. Blends vary, but a typical combination might be 7 parts allspice or pepper, 1 part each of cinnamon, cloves and nutmeg. This mixture should only be made-up in small quantities, otherwise it will lose flavour. A coffee mill reserved for the purpose is a good standby.
