A creamy, unpasteurised, goats" cheese, made by The Neal"s Yard Creamery in Herefordshire. It"s made in the form of a mini-log, and dense-textured, bright white, with a fresh and snappy lemony flavour. Made between March and December, and matured for between 2 and 3 weeks, so not available in late winter months. See "Fromage Frais"; "Finn"; "Perroche"; "Wealden"
