Razor shell (Ensis Ensis)
A variety of sand-burrowing clam, resembling an old-fashioned cut-throat razor when open. They live on both sides of the North Atlantic, and can grow up to 12cm long; if found on your fishmongers slab, they can be served baked or treated in any way you would serve mussels.
