Red Drum (Sciaenops ocellata)

A large fish of the Sciaenidae family, growing up to 1.5 metres, and living in the Western Atlantic. If you find one on your fishmongers slab, they are quite highly regarded and should be treated like Bass.

If you enjoy cooking take a minute to look at ‘Simon Scrutton French Cookery Classes’ on Google – and learn how to make top class bistro-style dishes. Suitable for beginners upwards. Small classes.
