Redfish (Sebastes marinus)

A fish growing up to a metre in length, but more commonly found at about half this size. It belongs to the Scorpaenidae family (like the rascasse of bouillabaisse fame), and lives, at depth, on both sides of the Northern Atlantic. It"s known as Ocean Perch in the U.S.A.

It"s a popular fish in Scandinavia and Germany, and the fillets can be fried or the fish baked, when whole. See 'Bouillabaisse'; 'Rascasse'
