rosehips / rose hips

Rose hips are very high in vitamin C, and they are a big industry in many Russian republics (for the production of ascorbic acid), most of which have no citrus trees and suffer a shortage of the vitamin.

A cup of pared rose hips may contain as much vitamin C as ten or twelve dozen oranges.

Rose hip jam - popular in some American states - is made without cooking the hips, so as to none of the volatile vitamin is lost.

If you enjoy cooking take a minute to look at ‘Simon Scrutton French Cookery Classes’ on Google – and learn how to make top class bistro-style dishes. Suitable for beginners upwards. Small classes.
