1. A foamy and light dessert cream - a version of Italian zabaglione; made by mixing caster sugar and egg yolks over very hot (but not boiling) water. It can be served hot or cold, and is often flavoured with a liqueur, meat glaze or suchlike - depending on use. (see photograph)
2. A sweet sauce.
