Sand Sole (Pegusa lascaris)
A small flat fish belonging to the Soleidae family, as Dover Sole. growing up to 35cm - it"s sometimes known as French sole.
It inhabits waters ranging from the Mediterranean to the English channel, and although not really big enough to fillet satisfactorily, is almost as highly regarded as Dover Sole - and should be treated in the same manner. See 'Dover Sole'
