These are pancakes, and are a traditional part of Ashkenazic Jewish cooking. They are called blinchiki in Russian and bletlach (leaves) in Yiddish, and originated in the Ukraine, as a Jewish version of Russian blinis. They are most commonly filled with cream cheese, but other sweet or savoury fillings might be used.
