Sea Drum (Pogonias cromis)

A large Western Atlantic fish - belonging to the Sciaendae family, inhabiting the seas around the coast of Florida. It has only moderate prestige on the culinary front so is unlikely to be found on your fishmongers slab in Britain. They sometimes go under the name of "Black Drum".

If you enjoy cooking take a minute to look at ‘Simon Scrutton French Cookery Classes’ on Google – and learn how to make top class bistro-style dishes. Suitable for beginners upwards. Small classes.
