Sheepshead (Archosargus Probatocephalus)

A large fish of the Sparidae family inhabiting the Western Atlantic, and growing up to about 70cm, and a weight of 8-9 kilos.

If you find one on your fishmongers slab, its an excellent fish; suitable to be cut into steaks or filleted and fried; or poached or baked as a whole fish.
