Skipper (Scombersox Saurus)

A thin shoaling fish, with a maximum length of about 50cm. It"s most often found around the latitude of the Canary Islands, but some venture as far as Norway and Newfoundland.

The flesh tends to be a little dry, but is good poached, or fried with care.
