Smelt / Rainbow Smelt / Sparkling (Osmerus Eperlanus)
Small freshwater fish, but tolerant of low saline solutions, so found up estuaries in Northern Europe and Britain. They reach up to 35cm in length, but 20cm is more usual. They are at their best floured and fried.
