Smooth Hound (Mustelus Mustelus)

A small form of shark inhabiting the Atlantic between the Mediterranean and the North Sea. It is related to the Tope (both growing to a length of nearly 1.5 metres); the Smooth Hound having smooth skin, and the Tope rough.

If found on your fishmongers slab, both are good baked (perhaps with white wine and tomatoes), or treated like Dogfish (huss) and deep-fried. See 'Dogfish'
