Solera system

The method in which Sherry, some Spanish brandy and some Malaga wine is produced. Wines are kept in a series of casks graduated by age. Never more than a third of any wine is drawn from each butt, and this is then replaced by younger wine, which "educated" into being old, by its older partner. By this system, it"s possible to preserve the same quality and character of wine over the years.
