Ras El-Hanout

A spice mixture used in the cooking of Algeria, Morocco and Tunisia. Families have their own mixtures, but the basic ingredients would include cardamom, cayenne pepper, coriander and cumin seeds, ginger and turmeric. Items, such as rose petals, are sometimes added - particularly when 'sweet' lamb dishes are being prepared. For suppliers see 'Spices' in our Mail Order Section.
