Squash; vegetable (Cucurbita Pepo)
An American general term for members of the cucurbita family. This includes courgettes, marrow, butternut squash etc. (twenty-seven varieties in all). The name is derived from the North American Indian word meaning "food eaten raw".
From the British standpoint, "Summer Squash" are a definite division, and the only varieties known as squash in Britain. They include "butternut squash", "custard squash" and "vegetable spaghetti". See 'Marrow; vegetable'
