Starry Ray (Raja radiata)
A form of ray, growing up to nearly a metre in length, ranging from the Mediterranean to Iceland and the most common to be found in British waters. It"s sold under the general title of skate, and like other members of the family (the Spotted Ray, Thornback Ray and Skate) is becoming scarce through over-fishing.
All these fish are better off a day or two after being caught, and a slight smell of ammonia is quite normal. They are excellent blanched in water, then fried with butter and capers, or simply floured and fried. See our Recipe Section - 'Skate'
