Bonito (sarda sarda)
One of the members of the Scombridae family, found on both sides of the Atlantic and in the Far-East, along with mackerel and tuna. For culinary purposes can be treated as tuna, although mature fish are much smaller, reaching a maximum length of less than a metre.
In Japan it is often dried, when whole it is known as katsuo-bushi; it is a necessary ingredient of Dashi, when its shavings (hana-katsuo) are used. See also "Dashi" & "Tuna (Thunnus thynnus)"
