If having a whole truckle of Stilton at home, the correct (and best) way of cutting it is to remove the top in one even circle, and then remove another complete circle for consumption. The crusty top can then be replaced to keep the cheese moist.
If having a half truckle, removing slim triangles of cheese in a regular circular fashion is better than scooping out cheese with a spoon - when it all going dry, as too much is exposed.
