Sweet and Sour Sauce

A sauce of Chinese origins, popular on both sides of the Atlantic - but not generally used in authentic Chinese ways. It combines the sweetness of pineapple with the sourness of vinegar.

Sauces of this type have been popular over many centuries - they include sauces described in 'Apicius' (used in Ancient Rome) and those made with verjuice in medieval Britain and Europe.
