A type of small wild duck of the group known as "dabblers" (surface feeders, unlike "divers" which feed beneath the water) that includes mallard and widgeon. Teal only reach 35 cm in length, so allow one for each person. When cooking, cut away the two nodules by the tail (they exude a waterproofing fluid that can give out a musky taste).
