The most popular soya food in Indonesia, where it originated more than 200 years ago. It's a fermented product made from cooked soybeans bound together by a dense fungus (rhizopus) and then moulded into compact patties. These are then sold fresh, or frozen - and prepared by frying them sliced. The flavour is similar to 'southern-fried' chicken.
