Thickback Sole (Microchirus variegatus)
A small flat fish belonging to the Soleidae family, as Dover Sole. growing up to 25cm - like the slightly larger Sand Sole, it"s sometimes known as French sole. As its name implies it has a thicker body than most similar flat fish.
It inhabits waters ranging from the Mediterranean to the English channel, and although not really big enough to fillet satisfactorily, is almost as highly regarded as Dover Sole - and should be treated in the same manner. See 'Dover Sole'
