Trout, farmed

Farmed and widely available - (the U.K produces 16,00 tons of rainbow trout a year, about 35 million fish). Other large producers are Denmark, France and Italy.

It"s flesh is often coloured pink, by using additives in its feed - these being astaxanthin (E161j) and canthaxanthin (E161g) (the same as those used for farmed salmon).

Stocking levels are generally even higher than those of salmon - often the equivalent of 27 adult fish sharing a bathtub of water.
