Truffle, White; (TuberMagnatum)

Opinion is divided over which offers the better flavour, black or white truffles; but most gastronomes would insist that the flavour of the latter at its best is unbeatable. Mozart called these "the Mozart of fungi"

They are only found in a few Italian locations, most of these being in the North-West of the country. Alba in Piedmont being the largest centre. Another good market being close-by at Ceva.
