Tusk / Torsk / Cusk (Brosme Brosme)
A fish belonging to the Gaddidae family, living in cold North Atlantic waters. It resembles a shorter, fatter Ling; its flesh contains a moderate amount of oil and is well-suited to baking or grilling. But outside the Orkney and Shetland Islands, it's most often found salted for use in making brandade (q.v.).
