An unpasteurised goats milk cheese made by Phyllis Teale in Somerset with milk from her own herd.
It is has a distinctive flat-topped-pyramid shape, and an ash covering. It's smooth with a powerful goaty punch, and a fluffy, curdy texture. Made between March and November.
