Umeboshi Plums

Japanese salty-sour pickled plums (ume) with a tart flavour.

The plums are pickled with sea salt and sundried for three to four days in the hottest days of the summer, then pickled again with sisho leaves. The plums are used in their home country as a digestive aid and general tonic - and are increasingly available at health shops in Britain. See 'Sisho leaves'
