An essential nutrient named after the Scandinavian goddess of beauty, vanadium is a trace element that appears to improve insulin action. Its best sources are buckwheat, dill, mushrooms, parsley and shellfish. It's not normally deficient in the human body, but supplements are available, and generally labeled 'Vanadyl sulphate'.
