A cereal of the genus Triticum, staple food for a third of the world"s population; there are two main types of wheat - hard, which is rich in gluten; and soft, which is rich in starch.

As well as being used to make flour, and then bread, wheat is used to make pasta - and was cultivated by both the Ancient Egyptians and the Romans. It"s the most nutritios of common staple grains - having more protein than rice.
