Whelk (Buccinum Undatum)

A gastropod common in British waters, growing up to 14cm in a spiral shape.

They are best carefully washed before being steamed or boiled until the operculum (the hard disc which closes the entrance) is easily separated from the meat.

They can then be shucked before being served with good mayonnaise.

If you enjoy cooking take a minute to look at ‘Simon Scrutton French Cookery Classes’ on Google – and learn how to make top class bistro-style dishes. Suitable for beginners upwards. Small classes.
