Caws Cenarth Dairy
Producers of award winning Caerphilly/Caerffili, and interesting variations on the basic recipe, using organic unpasteurised cows' milk from their herd of Friesian-Holsteins. These are namely 'Golden Cenarth', 'Cenarth Brie', 'Perl Las, 'Perl Wen' and 'Smoked Caerffili'.
Their cheeses are made using morning milk, which is naturally lower in fat perhaps giving their Caerffili a 10% lower fat content than a traditional Cheddar.
