An award-winning semi-soft unpasteurised sheeps' cheese, made by the Wigmore's at Risely near Reading. It's made between March and October, and as it's only aged for a maximum of 9 weeks, isn't available in winter months. Flavours are reminiscent of herbs and wild flowers.
