Yellow Beans

A type of bean popular in the Far East. They are prepared from fermented soya beans, in a similar way to "black beans", but end up with a pale brown colour.
They need rinsing in water before use, to remove any excess salt.
They can be bought , either as beans or as a sauce - ready prepared from Chinese supermarkets.
