Basil; Culinary uses

Pesto sauce (originating in the Genoa region of Italy) is one of basils best uses. It also combines well with tomatoes, especially when torn leaves are added to a sliced tomato salad.

It enhances tomato sauces - but should be added very near the end of cooking, or its flavour disappears.

It makes an excellent herb butter, when torn leaves are mixed with slightly softened butter. The compound butter goes well with steaks and other grilled meat and poultry.

When torn leaves are mixed with cream cheese, it is a good topping for baked potatoes.
