An old English, cows milk, soft 'slipcote' cheese, named after a village near Nottingham - where it pronounced 'collick'. The cheese has a creamy texture and slightly sour flavour. It has recently been re-introduced by Neal's Yard Dairy, Covent Garden, London.

If you enjoy cooking take a minute to look at ‘Simon Scrutton French Cookery Classes’ on Google – and learn how to make top class bistro-style dishes. Suitable for beginners upwards. Small classes.
