Pepper (Piper Nigrum)

The berry of a tropical vine - used as a spice. It is soft and green when unripe, goes through a red stage before becoming black and finally white. White are the hottest (being picked when the berries are left for longer before harvesting), but black - see the photograph below - have more flavour and aroma.

If you enjoy cooking take a minute to look at ‘Simon Scrutton French Cookery Classes’ on Google – and learn how to make top class bistro-style dishes. Suitable for beginners upwards. Small classes.
