Yorkshire Curd Tart

A form of cooked cheesecake, traditional in Yorkshire for hundreds of years. A shortcrust base and curd cheese are common to all recipes, but after this opinions differ – some insisting on currants and candied peel, others rosewater, cinnamon and nutmeg.
