A semi-soft, rind-washed, cheese made from unpasteurised cows' milk, using traditional rennet, by Doddington Dairy at Wooler in Northumberland.
The cheeses are made in a Dutch-style, before being rind-washed in various beers, but primarily in Baltic Summer Ale from Liverpool.
The cheese has a moist tangy flavour and a smooth texture. It's available by Mail Order from www.doddingtondairy.co.uk
