West Cork Natural Cheese Company

Makers of two thermophilic (Swiss-style) cheeses from local unpasteurised cows' milk.

They are called 'Desmond' and 'Gabriel'. The former, a hard piquant cheese with a pleasantly sharp aftertaste. The latter, again hard, but with a flavour of hazelnuts.

Both are aged for a minimum of 10 months – but the makers consider them even better with further aging. For more information, see (

If you enjoy cooking take a minute to look at ‘Simon Scrutton French Cookery Classes’ on Google – and learn how to make top class bistro-style dishes. Suitable for beginners upwards. Small classes.
