Suffolk Black Bacon

A type of bacon that was traditional in Suffolk, but now rarely-seen.It's produced by dry curing the meat in black treacle, sometimes with the addition of ale. The best version we have found is produced by Emmetts, near Darsham; who both have a shop (q.v.) and supply it by mail order.
