Lorne / Scottish Square Sausage

A form of square-shaped sausage meat slice, popular in Scotland and parts of North East England. Beef is the main ingredient, or sometimes a mixture of beef and pork.

They are thought to be named after the comedian Tommy Lorne (1890-1935), who for much of his life lived near Glasgow.

Square sausage slices of this type are a favourite ingredient of a Scottish Cooked Breakfast.
