Shark's Fin

The fins from some species of sharks are considered delicacies in China - being used both as whole dishes (when they are braised to retain their shape) or as an ingredient of sharks fin soup (which has its base in chicken stock). The gelatinous flesh is also used to flavour dishes, such as scrambled eggs.
