An award-winning, semi-skimmed milk, cheese made by Lightwood Cheese from milk from their own Friesian herd. Cheeses are matured for 8 months, then coated in green wax. The recipe is based on one from the 18th century, and cheeses are available in pasteurized and unpasteurised forms, they are crumbly in texture, in the style of Cheshire.
